Tropical Chia Pudding
This sunny fall afternoon brought my mind to the beach (this Vermonter is seriously dreaming, huh?).
Calls for a little tropical snack!
Something about layering things in a cup just make it all taste so...fancy.
Chia puddings are great, because it's an easy, super healthy snack and you can add in tons of different ingredients -- so many flavor possibilities! This time, though, we're going simple vanilla yogurt. Simple is best sometimes!
Making the pudding is super easy -- just mix the chia seeds into your yogurt and set in the fridge for an hour (overnight is preferable!).
HOT TIP: Can't deal with the texture of chia pudding? If you prefer a smoother texture (I usually do), just add a tiny bit of almond milk, the yogurt, and the chia seeds to a blender and blend it up before putting it in the fridge.
Add your frozen banana, frozen pineapple, and almond milk (or orange juice? yum!) to the blender and blend up.
Then just layer in your cup!
- 3/4 CUP Yogurt
- 1/4 CUP Chia Seeds
- 1/4 CUP Almond Milk
- 1/2 Frozen Banana
- 1/2 CUP Frozen Pineapple
- 1 Orange
- Combine yogurt and chia seeds in bowl and place in refrigerator over night.
- Cut up orange and layer on top of pudding
- Add almond milk, frozen banana, and pineapple to blender and blend.
- Layer over orange.
