GREEN JUICE ICE CUBES

More Kale? Yes.

I LOVE: tons of greens. I HATE: not being able to use up every bit of these greens before they die tragically in my 'fridge.

Don't let your greens die a horrible refrigerator-related death -- make them into green juice ice cubes!

This gives you a better chance of utilizing all of your greens without eating salad for breakfast, lunch, and dinner. I used Kale, because that's what I got this week, but you could easily use spinach, or a combination of leafy greens for this.

Just blend them up in a high powered blender (I use my Vitamix 7500 Blender) and then pour them in an ice cube tray and freeze.

I make a batch of these each time I get a ton of leafy greens in my CSA! It feels good to know I'll be able to use these cubes periodically throughout the next week or two without worry of expiration!

GREEN JUICE ICE CUBES

Ingredients
  • 1 Bunch of Kale
  • 2 CUPS Water
  • Juice of 1 Lemon (optional)
Instructions
  1. Wash and dry Kale
  2. Remove stems from leaves (I just find it makes a smoother juice this way)
  3. Place Water (1st) and Kale (2nd) in a high powered blender
  4. Start on low speed and work up to highest speed, blend for 30-60 seconds
  5. Pour juice into an ice cube tray
  6. Freeze!
  7. Add 3-4 cubes to your juices and smoothies for a nutritional green kick!
